Ripping with EAC prevents errors, but there's no way to actually prevent clipping, such as carefully normalizing every track.

You should definitely keep using MP3Gain.

If the clipping is really an issue, I suggest you to find a program, or method in EAC for "normalizing" WAV's that really just lowers the volume of every track by maybe 3 or 5%, before encoding. Truth be told, I really don't know if such a thing exists.
