Bitrate determines the quality and size of the MP3. The lower the bitrate, the less space an MP3 will take up and the easier it would be to stream; but the quality will not be as good as if the same song was encoded at a higher bitrate. 128kbps is typical, but it takes at the very least 160kbps for an MP3 to really be CD-quality.
Sound depth is just what it is. CD-quality is 44kHz, whereas most online radio stations that you can listen to on a dialup modem are 22kHz. 22kHz generally sounds less clear than 44kHz.
