It's true, not all MP3 encoders are created equal. AudioCatalyst uses the Xing MP3 encoder, which produces particularly bad MP3's. The only program off the top of my head that actually performs worse than Xing is Blade.
The best MP3 encoders out there, quality-wise (I'm speaking from years of experience) are:
Fraunhofer(Radium) [for MP3's below 128kbps]http://www.riphelp.com/downloads/radium_codec.html
and Lame [for MP3's at 128kbps and above, and VBR MP3's]

Lame is a commandline MP3 encoder that runs inside a DOS window. All the good CD->MP3 programs (Exact Audio Copy, CDex, AudioGrabber...) support it. For information on how to set it up and use it, ask the nice people at either
