In the Windows MP3 Editing section of this site, you can find a program called MP3 Track Maker which facilitates cutting up an MP3 into tracks.

And at http://www.logiccell.com/ you can pick up a program called MP3Trim for general MP3 trimming. To trim very large files with MP3Trim you'll need to purchase it, though. Aside from that the free version of MP3Trim is very good.
